Classic Chicken a La King


Quick and easy to make Chicken a La King is a delicious old classic chicken recipe.I have used mushrooms in this recipe as I love them, but feel free to leave them out. Instead you can use cooked peas and carrots.You can freeze Chicken a La King,so make double if you like,then you can thaw it in the microwave the next time you feel like having it again It is also great to use with leftover chicken.
This recipe can be served with rice,noodles or macaroni.You can also serve it over mashed potatoes.











Ingredients:-

1 chicken,cooked,deboned and cut into bite-sized pieces.
3 Tbsp butter
4 onions,chopped
3 green capsicums, cored,seeded and diced
500 gms, button mushrooms, quartered
100 gms plain flour
2 cups milk
1 cup chicken stock
1 tsp ground nutmeg
150 ml cream 
1 tablespoon lemon juice
salt and pepper to taste

Method:-

Melt the butter and saute the onions and capsicums till softened.
Add mushrooms and fry till tender.
Stir in the flour and cook for 1 minute.
Gradually stir in the milk.Bring to a boil,stirring continuously.
Add the stock and simmer for 3 minutes, until thickened.
Add the chicken,nutmeg and salt and pepper
Simmer for 5 minutes until heated through.
Remove from heat and stir in the cream and lemon juice.
Serve it with rice, pasta or spoon over with mashed potatoes.
