Rainbow cake with fresh cream (malai)

This cake would catch any child's fancy - the symphony of  vibrant colors and the multicolored hues in this cake are a pure delight for the kids.This is a perfect cake to bake on a weekend with your kids.Give them a free hand in letting them use their imagination to choose the colors they want. After mixing the colors with the basic batter, let them spoon in the colorful batter ( turn a blind eye to the mess created) in the baking dish in any pattern that they like. It not only gives them a sense of achievement but also a great feeling of pride that they are in charge. I made this cake with my 10 year old son and Boy! was he proud of his handiwork He.took it to school next day to share it with his  class teacher and friends and I am sure they must have heard endless stories about the cake.

Ingredients :-
2 cups plain flour
4 eggs                                                                      
1 1/2 cups sugar
1 cup malai (fresh cream)
2 tsps baking powder
1/2 tsp salt                                                                        
1 tsp vanilla essence
food colors (as per your choice)

Method:-
Preheat the oven to 180 C.
In a mixing bowl, beat the eggs and  sugar with a electric beater till nice and fluffy.
Sieve the flour, baking powder and the salt.
Add it to the eggs and sugar mixture.
In another bowl beat the cream lightly till it is smooth. (If the malai is too grainy and hard add a little milk to it and strain it in a tea strainer.)
Add the beaten malai and vanilla essence and fold it in  with a light hand.
Once this basic white batter is prepared, take several bowls and divide the batter equally between them depending on the number of colors you choose to use.(You can use cocoa powder to get the brown color).
In a prepared baking dish spoon in the batter in any way you like till all of it is used up. (you can either spoon the colors one on top of each other, layer them alternately, put them separately...as you like it).
Bake it in a preheated oven at 175 C for 35 - 40 minutes or till the cake is firm to touch.
If your kids do give you the chance - cool  it before serving.
