Lemon cake



It's beautiful outside! Its pouring really heavily and you can hear the loud  thunder rumbling from the sky and rattling the windows.The cool blowing breeze is playing a merry dance with my curtains dancing to the tunes of the falling rain. Such a welcome change from the sultriness of the past few days.Its a perfect day  to sit outside in the balcony with your favorite book  and a cup of hot tea for company.
But here I am worrying, as I have a cake baking in the oven and I am keeping my fingers crossed that the power doesn't go off before the cake is done! Its my father-in-laws birthday tomorrow and I am trying out this new lemon cake recipe that I found on the net (king Arthurs Flour) I followed the recipe to the "T" without  making any changes to it. 


Ingredients
1 cup unsalted butter
2 cups sugar
1 teaspoon salt
4 large eggs
2 tsps baking powder
3 cups flour
1/2 cup milk
finely grated rind of 2 lemons
1 tsp lemon juice


For the lemon glaze
1/3 cup freshly squeezed lemon juice
3/4 cup sugar






Method:-
Preheat the oven to 180 C.
Beat together the butter, sugar, and salt till well mixed and fluffy.
Add the eggs one at a time, beating well after each addition.
Sieve the flour and the baking powder, then fold in the flour alternately with the milk and mix well till smooth.
Stir in the grated rind and the lemon juice.
Spoon the batter into a prepared tin and bake the cake for 55 - 60 minutes, or until the toothpick inserted into the center comes out clean.
Remove the cake from the oven and after 5 minutes run a knife around the edge of the tin to loosen and turn the cake out on a plate. Put another plate on top and immediately turn the cake over, so its right side up.
For the glaze,stir together the lemon juice and icing sugar. Brush it on the hot cake. Let it sink in then brush on more glaze, continuing until all the glaze is used up.Allow the cake to cool before slicing. 


     You must be wondering how my  cake turned out. Yes, inspite off all the built up tension about the power going off - it didn't play truant and finally I was able to finish baking the cake. I was really happy with the way the cake turned out  - all firm and baked to a golden perfection -without a single crack on the top.But unfortunately for me, while I was trying to turn the cake out, it just broke from one corner. The damage was irreparable, so really I never got to the icing part and with a heavy heart  I had to slice the cake in pieces.(much to the delight  of my kids). That is the Murphy's law for you - "just when you think nothing can go wrong, it will". Nevertheless, it tasted great -soft and superbly moist and incredibly tangy! So,If you are the lime and lemony  kind of person this delicious cake is just for you.
     
     
And as for me, I am off to bake another cake for tomorrow..........
