Mashed potatoes with garlic and chives



Did you know that a medium-sized potato provides as much vitamin C as an orange?
Also that potato's potassium level is as great as the banana's - but it contains fewer calories.Surprising isn't it? I think potatoes are the  most versatile of all vegetables - taking on various textures and flavors depending on the way they are cooked. They are boiled, mashed, fried, baked,served whole, made into potato chips, used in potato salad, used in curries and added to vegetables. There are innumerable ways in which this humble vegetable can be cooked - whatever the way they always taste great!
Ingredients
1 kg potatoes
3 Tbsp butter
1 Tbsp cheese spread
1/2 cup milk
2 Tbsp fresh cream
2 Tbsp finely chopped chives (the green part of spring onions)
salt and pepper to taste
4-5 cloves garlic, lightly crushed
Method
Pressure cook the potatoes till done. Cool and peel them.
With a potato masher or a fork, mash the potatoes with butter, cream and cheese spread till nice and smooth.
Add the crushed garlic and mix well.
Warm the milk and blend into the mashed potatoes.
Stir in the chives.
Check the seasoning and add salt and pepper to taste.
Put the mashed potatoes in a baking dish.Dot the surface with butter.
Bake in a preheated oven at 220 C  for 20-25 minutes.
Serve immediately.
