Just back from a lovely holiday in the Andamans Islands. The beautiful pristine beaches, the amazing coral reefs and the sea life was just out of the world.Scuba diving was an experience of a lifetime because of the rich beautiful coral reefs and the awesome underwater sea world.So, after a few days of relaxing and recuperating from the aftermath of the holiday I am back to my baking and blogging.
Calzones are just like folded pizza pockets with a filling inside.The great thing about them are that they are really easy to make and you can have any filling of your choice.You can also make the dough in advance and freeze it.... Just thaw it to room temperature before making and you are ready to go.....
Ingredients
Flour - 3 cups
Dry yeast -2 tsp
half and half mixture of milk and water - 1 cup
Sugar - 1tbsp
Salt - 1 tsp
Oil - 3 tsp
Filling
You can make a filling of your choice...This is what I did....
Oil - 1 tsp
Onion -3 tbsp (chopped)
Garlic -1 tsp ("chopped)
Mushroom - 100 gms (chopped)
Grated cheese - 1/2 cup
Salt - to taste
Dried oregano - 1 tsp
Egg -1 (for egg wash)
Method
Preheat the oven to 200 C
Dissolve yeast in the milk -water mixture
Add sugar, salt, oil and mix.
Add the flour and knead the dough for 8 -10 minutes till it is smooth and elastic.
Cover and keep aside for an hour or till the dough doubles in size.
For the filling, in a pan add oil.
Add the onions and garlic and mushrooms.
Add salt and pepper to taste.
Saute for 5 minutes on high heat till all the juices dry up.
Remove from heat and add the grated cheese and the dried oregano.
Keep aside to cool.
Divide the dough into 7 -8 equal balls.
Roll each dough into circles.
Put 2 tbsp of filling on one half of the rolled dough and fold the dough over the filling to form a half - moon.
Pinch the edges with your fingers to seal them.
Place the calzones in a baking tray and brush with egg wash.
Bake for 20 -25 minutes till crust is golden brown.
