My First Blogiversary (Re-posting Microwave Chocolate Cake with Mocha Icing)



Today my blog has crossed the 1 year mark. Looking back at the past one year, I feel I have come such a long way since I first started my blog. 
In fact, I almost forgot about today as the past few days have been quite a whirlwind - Initially it was the viral fever which had gripped almost every member in the family except me (who cannot afford the luxury of falling sick) and now a big family (about 20 people) get-together at my place tomorrow, which has me totally in a tizzy, keeping me totally  busy with the organizing and the planning.
Absolutely not complaining - in fact, whenever there is an opportunity like this, I make it a point to dig out some recipe that I have been wanting to try out for long but haven't got around to doing it. Its like "hitting two birds with one stone" or maybe " having your cake and eating it too" suits it much better. 
Any way,  much as I would have loved to write a long reflection, right now ending on a real quick note (as I still have tons of work left to do). On this special day, I am re-posting one of my very special and oft used microwave cake recipe which hasn't ever failed me to-date. This was the post with which I entered this wonderful world of blogging hence is very dear to my heart. Its amazingly simple and can actually be rustled up in minutes and topped with the chocolate icing   it  tastes right from a bakery.

Microwave Chocolate Cake with Mocha Icing
This is one of my most favorite recipe of a chocolate cake. It is really simple and quick to make as it is a microwave recipe and can be made in just 8 minutes. Especially great for those of you, who are working and are looking for something quick and easy, which is great in taste too. The icing too is extremely easy to make. I taught it to kids in their after-school activity and believe me it was a great hit. This cake is also excellent to use as a base for your chocolate puddings.

For the chocolate cake:-
100 gms flour
100 gms sugar
4 Tbsp cocoa
1 tsp coffee powder
4 eggs
1 tsp baking powder
1 tsp baking soda
½ cup oil
1 tsp vanilla essence
½ cup cold milk
1 tbsp vinegar

Method:
Sift together all your dry ingredients –Maida, cocoa, coffee powder, baking powder and baking soda and keep them aside.
Add vinegar to the cold milk and put in the fridge till required.
 In a bowl, beat the eggs and sugar really well till the mixture is nice and  fluffy and creamy. Use a hand mixer for good results.
Pour in the oil and the milk and vinegar mixture and mix well.
Add the vanilla essence.
 Take a wooden spoon or a wooden spatula and fold in carefully the dry ingredients into the egg mixture till well mixed.
Pour the batter into a greased microwave dish
 Bake in the microwave oven at HIGH (100%) for 7 minutes. Insert a toothpick to check if it comes out clean. If not done, bake for one more minute at MEDIUM (70%).
The cake should start pulling away from the sides and springs back when touched.
Cover the cake and leave it in the microwave for 5 -10 minutes.
Cool and decorate it with Mocha icing or any other icing of your choice.

Mocha Icing
 4 tbsp cocoa powder
50 gms unsalted butter
1 tsp coffee
1 cup icing sugar – sifted
2-3 tbsp chopped walnuts (optional)
To soak – ¼ cup coke or any other cola

Method
Soak the chocolate cake with the cola
Microwave 4 tbsp water in a bowl for 1 minute.
Add coffee and mix.
Add cocoa and butter to it and mix well. 
Return to and microwave for 1 minute or till butter melts.
Gradually add the sifted icing sugar. Mix well.
Glaze the chocolate cake with the icing.
 Decorate with walnuts.
Refrigerate until glaze is set.

Serve it and see how quickly it disappears!!

    I've been making the chocolate mug cake to satisfy dessert cravings for a while, though minus 1T of sugar and plus 2-3T chocolate chips and a bit of coffee. Delicious when soaked with milk afterward. Thanks for posting,
