Ribbon Galette

I made this dish after a long, long time primarily as I  had always thought it to be very cumbersome and time consuming considering the amount of prep that goes into it. But this time I made it in two batches - on day 1, I made the omlettes and on day 2, I made the fillings and the cheese sauce. This reduced the whole effort to half and the result - absolutely, totally yummylicious!!
It is an absolute delight to feel the different flavours and textures of the filling as you take a bite of it. Also the best part about this dish is that you just can't make out that the different layers are actually omlettes (Another great way to make your fussy child eat eggs.) I am sure that this dish will be a surefire hit at your party and will leave your guests wondering and wanting more of it.


Ingredients :-
10 large eggs
200 gms spinach
5-6 tbsp tomatoes
100 gms crumbled cottage cheese
200 gms  finely chopped mushrooms
1 capsicum finely chopped
1 tsp finely chopped onions
1 tsp finely chopped garlic
1 tsp thyme
2 tsps mustard powder
1 tbsp mayonnaise
2 cups cheese sauce
1 tsp cheese spread
a pinch of red colour
salt and pepper to taste
little oil

Method :-
Boil the spinach.Squeeze out as much water as possible.Puree.
Boil 5-6 tomatoes. Remove the skin and puree. Cook this puree in a pan till you get a thick concentrated paste.

Beat together 5 eggs, spinach puree, salt and pepper.
Make 5-6 omlettes. Do not fold.Use a good non-stick pan to make the omlettes as they are thin and tend to stick sometimes.


Beat the remaining eggs, tomato concentrate, salt and pepper. Mix in the red color.
Make 5-6 omlettes. Keep aside.





Saute the onions, garlic, mushrooms and capsicum for 4-5 minutes.(Add seasoning later as it leaves water.)
Mash the cottage cheese. Mix in the mayonnaise, cheese spread,thyme, salt and pepper.








Mix together the cheese sauce and the mustard powder well.
In a round plate place a tomato omlette. Spoon some mushroom mixture on it.
 Place a spinach omlette on top of this. Spread some cheese sauce on it.
Next, place the tomato omlette on top of the spinach omlette. Now, spoon some cottage cheese mixture on it.
Again, place a spinach omlette on top and spread some cheese sauce on it.
Keep alternating the layers and the fillings, ending with the spinach omlette.
When all the omlettes are used up, press down gently to stack them better.
Take a sharp knife and trim the edges to give it a neat look.
Serve warm with extra cheese sauce on the top.




To make the Cheese Sauce :- Heat 3 tbsp butter (you can use half oil, half butter). Add 3 rounded tbsp flour. Cook for a few seconds, then add 11/2 cups cold milk, stirring well. Add 100 gms grated cheese. Season to taste with salt, pepper and mustard powder.
