The Perfect Chocolate Cake

Finally, my quest for the perfect chocolate cake has ended!!
After many hits and trials, I finally managed to work out a recipe, for the ultimate deep dark chocolate cake - a cake that is really soft, moist, chocolatey and just melts in your mouth. Sounds yummylicious, doesn't it ?
Go ahead and try it for yourself !!

Ingredients
3 eggs
120 gms brown sugar
120 gms plain flour
1 tsp baking powder
1 tsp baking soda
1 tsp coffee
4 tbsp cocoa
1/4 cup milk + 2 tsp vinegar ( mix and keep aside)
100 gms cooking chocolate
1/4 cup oil
Pinch of salt

Method
Preheat the oven to 185 C.
Sift the flour, cocoa, coffee, baking soda, baking powder, and salt into a bowl and mix until combined.
Melt the chocolate on a double boiler or place it in a microwave-safe bowl and microwave, uncovered, on MEDIUM (50%) for 1 to 2 minutes, stirring every minute with a metal spoon, until almost melted. Set aside to cool.
In another bowl, with a hand mixer beat together the eggs and sugar for a 4-5 minutes till the mixture turns pale and frothy.
Add in the dry ingredients gradually. Mix on low till the dry ingredients are thoroughly combined.
Add the melted chocolate, milk and oil and beat on medium speed for 2 minutes
Pour the batter into a prepared pan.
Bake in preheated oven for 35 to 40 minutes or until wooden toothpick inserted in center comes out clean.
 Cool completely.

  4. Thanks a lot! I guess it is the Vinegar and milk (buttermilk) that really helps to make the cake soft.
