Whenever I think of Mayonnaise, it always reminds me of loads of calories !! It is that necessary evil which you just can't do without. But can anyone deny the fact that this humble mayonnaise can add excitement to even the dullest of dishes and can adapt itself to go with a variety of dishes. Even though we all love it, we (all of us who are perpetually watching our waistlines) tend to have it with a lot of caution considering its highly caloric property. Can you imagine there are 57 calories in 1 Tablespoon of Mayonnaise - which amounts to about 15 minutes of high-speed walking on the treadmill. Not really fair that we have to pay such a heavy price for the small pleasures of life.
So, for all you weight watchers out there, here's an extremely low cal version of mayonnaise that you can slosh on to your sandwiches and salads without burdening yourself with guilt.This has half the number of calories and fat content than the regular mayonnaise. But do remember it is "less fat" and not "fat free". Also you cannot store it for too long. It stays at the most for about 3 days in the refrigerator.
For this very unusual recipe I need to thank my friend, Anurag. He is one guy who cooks straight from his heart, without needing a cookbook in front, managing to concoct such wonderful dishes at the spur of the moment. In fact, he and his wife Tina were our immediate neighbors in Pune, and being newly married I was totally in awe of their culinary skills as they used to turn out such jaw dropping, exotic dishes like souffles, barbecues, iced cakes, continental dishes and what not which were, at that time, totally unimaginable for me to make and quite a novelty in the eyes of a novice like me.
I totally swear by this recipe and to all of you out there who are having a difficult time managing your waistline and still do not want to compromise on taste, this is just the recipe for you !!
Ingredients
1/2 cup milk
3 heaped Tbsp Cornflour.
1 egg
4 tbsp oil
1 Tbsp vinegar
1/2 tsp oil
1/2 tsp sugar
1/2 tsp mustard powder
3-4 cloves garlic
Method
In a bowl mix together the milk and cornflour till fully dissolved.
Heat a medium sized pan and pour in the milk mixture. Keep stirring continuously till the mixture becomes thick and almost like a ball.
Keep aside to cool.

In a food processor, combine the above mixture, egg, garlic cloves, vinegar, mustard powder, salt, sugar and 2 Tablespoon of oil (start with 2 Tbsp of oil, then add more slowly as needed) Process for 15 -20 seconds till smooth and creamy.
Add the remaining oil and blend again till the required consistency is reached.
Stop the machine and check the mayonnaise for taste and consistency.
Adjust the seasonings and, if the mayonnaise is very thick, process in additional drops of lemon juice or warm water to thin.
Transfer the finished mayonnaise to a bowl or jar and store in the refrigerator.
This Mayonnaise makes a great coleslaw by adding 1/2 a cup of cream and finely shredded cabbage.
If using for "Russian Salad", omit the garlic cloves.
Makes about 11/2 cups of Mayonnaise.
