Cocoa Apple Cake



 Usually when it comes to baking cakes, in my house the chocolate cake always wins all votes hands down.This time too, when I decided upon baking an apple cake, I just couldn't resist adding cocoa to it. I guess old habits die hard.
I loved it especially while baking the cake,how my entire house was  filled with the lovely sweet aromatic smell of cinnamon, making the long wait worthwhile. This cake also makes an excellent dessert served with ice-cream and chocolate sauce.
Whenever I bake a cake, I love to make some extra batter and keep it aside to use it for making cupcakes, which my kids love to take in their lunchboxes. Here too, I made some extra batter and spooned it in paper cupcakes and turned them in the microwave for 4 minutes.Quick and easy and baked to perfection.

Ingredients
3 eggs
2 cups sugar               1/3 cup water
2 1/4 cups flour
100 gms butter
2 tbsp cocoa
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon powder
1 tsp all spice powder
1/2 cup  choco-chips
2 cups grated apple
1 tsp vanilla essence


Method
Cream together until fluffy the eggs, sugar and butter.
Add water and beat again for 2-3 minutes.
In another bowl sift together the flour, cocoa, baking powder, baking soda and the spices.
Add the dry ingredients to the creamed mixture and mix well.
Fold in the choco chips, grated apple and the vanilla essence.
Stir gently till these are evenly distributed.
Spoon into a greased and floured baking tin (about 10 inches).
Bake at 165C for 1 hour 15 minutes or till done.
Serve with ice cream and chocolate sauce.
